If you’re thirsty for some traditional German beers without the 10-hour flight, Dovetail Brewery is a great spot to check out in the city. They boast traditional German-style beers that transport your taste buds to the biergartens of Berlin.
Chicago natives Hagen Dost and Bill Wesselink met halfway around the world in Munich, Germany, while they both studied for their Master Brewer Certifications. Much like Bavarian woodworkers carefully carving pieces of wood into beautiful furniture, German brewing requires precise care and technique. Their appreciation of high-quality craftsmanship and brewing led them to open the traditional German-style brewery in the heart of Lincoln Square - a former German neighborhood. From easy-drinking lagers to funky kriek beers, Dovetail sticks to its roots while incorporating modern methods any beer lover can appreciate.
The main floor has plenty of tables and bar space, and during busy weekends they open seating upstairs in their barrel room. In the spring and fall, they partner with Begyle Brewery next door to host the Mayfest and Oktoberfestiversary street festivals to benefit local food pantries.
The core lineup includes the Vienna Lager, traditional Lager, Helles, Kölsch, Pilsner, and Hefeweizen. Throughout the year, they offer seasonal kriek beers made with fresh Michigan cherries or blueberries, barrel-aged spontaneously fermented beers, and dark malt beers during the winter months.
