Building on the success of its Bridgeport outpost, Marz Community Brewing comes to Chicago's North Side, taking up residence in the same building that houses Margie's Candies ice cream parlor and the Snakes & Lattes board game café. The brewery will play a major role in the operations of The Plant’s anaerobic digester. Once up and running, Whiner’s spent grain will help fuel the digester, producing energy for the entire building.


    Whiner specializes in wild and sour beers brewed in French and Belgian styles, meaning most are softly fizzy with interesting, funky flavors. Their signature Le Tub is indicative of the style, an easy-sipping barrel-aged Saison. They also do a hoppy Rubrique a Brac, a brown ale that's almost cheesy, thanks to Brettanomyces bacteria used in the brewing process, and the lovely Miaou, a medium-weight Belgian beer that's at once grassy and cider-like.

In the brewery, Head Brewer Brant Dubovick’s focus is on farmhouse ales and hop-forward beers.
