Geranium, which is in 2nd place on the list of the best restaurants in Denmark, grows in the seemingly incongruous setting of Denmark's major soccer stadium. The kitchen windows provide fantastic pitch views (ask for a kitchen tour) while staring northwards provides panoramic views of the pastoral Faelledparken (Common Gardens), giving the impression that you are a world away from a Monday night home match against arch-rivals Sweden.
Many restaurants adapt their menus to the changing seasons, but Geranium goes above and beyond. The newest Autumn Universe selection is a prime example, beginning with rich pickings like Jerusalem artichoke leaves and pickled walnut and progressing into a sequence of fish and seafood courses that reflect Chef Rasmus Kofoed's passion for sea-foraging. Squid with melted smoked lard, yeast aroma, and potatoes is a true flavor of Denmark's brackish seas, while pheasant with thyme seeds, berries, and pickled pine is the only meat on the 16-course menu.
There are possibly no greater chefs in the world at bringing beauty to the cuisine than Kofoed. He has an innate ability to create absolutely magnificent meals that make the most of color, empty space, and an accurate volume of ingredients, resulting in a synergy between flavor, aestheticism, and a sense of flow that runs throughout the menu.
