Noma
Noma is not your average Michelin-starred restaurant. They've emerged as true forerunners of the New Nordic Kitchen Manifesto, facilitating its spread across the country. They want to reintroduce the traditional usage of local foods and culinary methods.
Noma splits their cuisine into three themes, each highlighting a different season and its greatest foods. From January till the beginning of the summer, the cuisine will focus on Scandinavian shellfish. From then until autumn, vegetables will be the focus, followed by a menu of game and woodland ingredients until next January. Aside from ensuring that the ingredients remain of consistently high quality, the change of seasons also emphasizes the Manifesto of New Nordic Kitchen, which Rene Redzepi co-wrote. It was founded in 2004, and it illustrates how the Nordic kitchen could be innovative while yet maintaining. The emphasis is on health and ethical production philosophy, yet traditional foods and processes are still used. A benefit of this method of operation is the more sustainable handling of components, as it eliminates the need for an expensive middleman with a high environmental impact.
