Osteria Francescana
Massimo Bottura is an art collector in addition to being one of the world's best and most recognizable chefs. It's no surprise that his three-Michelin-starred Modena restaurant, Osteria Francescana, houses some of his favorite works. The ironed tablecloths and polished silver are symbols of Italian hospitality. It has a contemporary art collection, books, and vinyl records, and a pantry stocked with traditional Emilian ingredients like Parmigiano Reggiano, Aceto Balsamico, and Lambrusco.
Osteria Francescana is both fast and slow, a modern and traditional kitchen all at once. This tasting menu is updated based on the latest kitchen research. The starters include an eel swimming up the Po River, five ages of Parmigiano Reggiano in various textures and temperatures, croccantino: foie gras terrine covered with caramelized almonds from Noto and hazelnuts from Piedmont, filled with Villa Manodori Traditional Balsamic Vinegar from Modena, and served with Campanine apple mustard. It also includes lobster in a double sauce that is acidic and sweet, Fillet alla Rossini with foie gras and caviar, Modenese tortellini with Parmigiano Reggiano cream, and other dishes.
