As You Are

Ryan Jordan, a former head chef at NYC's Nomad property's restaurants John Dory and the Breslin and current owner of As You Are, is a veteran of the Ace Hotel. As You Are is located at 252 Schermerhorn Street in Boerum Hill. He is joined by chef Danny Alvarez, a former employee of the Union Square Hospitality Group who was recognized as an Eater Young Gun in 2018 for his work managing the pastry program at Daily Provisions. For the time being, the pair is providing morning pastries and evening service from a broad, international menu that draws from a variety of cuisines.

Everything from pasta cooked with an Italian extruder to short rib cheeseburgers served on giant English muffins. There is a recurring theme of inventive takes on traditional foods. An example of chicken liver and onions is a mousse of chicken and duck liver spread on a madeleine flavored with bay leaves and topped with onion compote. A black and white doughnut and a "BEC" (bean, egg, and chorizo) focaccia will be available in Alvarez's pastry case.
