Burt's Place
Burt's is the Best Pizza Spots In Chicago, and its background is known. The original Pequod's was founded by longtime owner Burt Katz, who later sold the company. Later, he opened Burt's Place in the suburb of Morton Grove, which serves pies somewhat resembling Pequod's.
Several decades later, in 2015, Katz made the decision to leave the industry, despite the fact that he had only recently become famous after appearing on an Anthony Bourdain "No Reservations" episode. Burt's only had one oven, so diners had to call in their pizza orders two days in advance or risk being turned away at the door even if they had a reservation. The restaurant had almost become too popular.
Katz unfortunately passed away in 2016, and the restaurant stood empty until its new owners relaunched for business in early 2017. (via Chicago Tribune). Fortunately, in renovating his kitchen, they kept a lot of Katz's cooking and flair, resulting in pizzas that are nearly as wonderful as the originals. Smart customers know to choose just one or two toppings, like pepperoni and sausage, as too many toppings can mask Burt's delectable deep dish's pure doughy, cheesy flavor.
