Piece Brewery and Pizzeria
Piece, one of the Best Pizza Spots In Chicago, a popular Wicker Park brewery and pizzeria, is a joint venture of guitarist for Cheap Trick and local legend Rick Nielsen (via The Daily Meal). If you go at the appropriate moment, you might see him (or Dave Grohl) eating pie.
By providing New Haven-style pies, which originated in Connecticut and are somewhat of a crispier, greasier twist on Neapolitan pizza, Piece distinguishes out from the competition in Chicago. Piece's New Haven-style pizza is baked in a coal oven and is available in a number of traditional variations, including a tomato pie with no mozzarella at all.
But customized pizzas are where Piece really excels. For its menu, the restaurant has collaborated with a variety of renowned eateries, including the storied Hot Doug's, which shut its doors in 2018 (via Serious Eats). Even though some of the ensuing inventions, like the pizzas with Honey Butter Fried Chicken and Hot Doug's Atomic Sausage, can sound a little strange, their flavor profiles are indisputable.
With Piece's extensive selection of premium toppings, which includes clams, house-made meatballs, giardiniera, and both feta and gorgonzola cheese, anyone who might be hesitant to try a full-out chef creation can always create their own pizza.
