As a substitute for mayo
Avocados are a great alternative to mayonnaise in recipes that call for it as a binder ingredient. When compared to mayo, avocado has around half the calories: two tablespoons of avocado have 50 calories while mayonnaise has 100 calories. Avocado is cholesterol-free and contains half the fat (4.5g to 9g) per serving. Just a simple swap can completely transform the healthfulness of the recipe!
Ingredients:
- Avocado
- Lemon juice
- Scallions
- Mustard
- Salt and freshly ground black pepper, to taste
Instruction:
- Cut a ripe avocado into cubes, then in a medium bowl, combine the avocado, lemon juice, scallions, and mustard.
- Smash it well with a fork or the back of a spoon.
- Season with salt and pepper, to taste.
