Stuffed
Avocados are a great addition to your healthy lifestyle and may be eaten frequently because they are full of creaminess and good fats. Ingredients:
- 1/2 lb ground beef
- 2 tablespoons taco seasoning
- 2 large avocados (halved, pitted, and scooped out)
- 1/2 cup shredded cheddar cheese
- 1/4 cup red enchilada sauce
- Toppings: sour cream, salsa, cilantro
Instruction:
- Set the oven to broil.
- Cook the ground beef in a large pan while adding taco spice. Add 1/3 cup water and cook until liquid reduces. On a baking sheet, put the avocados. Each avocado contains 1/4 of the beef mixture. Each beef combination should have one spoonful of enchilada sauce on top it. Add 2 tablespoons of cheese on top. Broil for 3-5 minutes or until cheese is melted and avocados are warm.
- Add preferred toppings, such as cilantro, salsa, or sour cream.
