These crunchy fried avocado wedges are a great substitute if you love avocado but are getting sick of guacamole and avocado toast. Serve some fried as a side dish with breakfast, lunch, or dinner, as an appetizer for a special event, or as a weekend game-day snack. They can either be fried in deep oil or, for a healthy alternative, baked. You may eat your avocado fries with a variety of dipping sauces, consider using your preferred homemade dip instead of the spicy cilantro-lime mayo. Ingredients:
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 ripe avocados
Instruction:
- In 3 separate bowls place the eggs, panko and flour.
- Sprinkle the avocado slices with the salt, to taste.
- Place the avocado slice in the panko and use your fingers to lightly press the avocado into the panko to create an even coating.
- Drop the avocado slices, 4 to 5 at a time into the hot oil.
- Cook 3 to 4 minutes, until the avocado slices turn golden brown.
- Remove to a paper towel-lined plate and repeat until all the avocado slices are cooked.
