In soups
Most people are familiar with creamy tomato bisque and creamy split pea soup, but few are familiar with hot tomato avocado soup or creamy avocado soup. Soups are a great additional way to enjoy avocados. You may make avocado soup with avocados as the main component or you can add chunks of this green fruit to other soups. Fresh avocados are always a good choice whether you're making a hot tortilla soup with avocado for a cold winter day or a cold avocado soup like gazpacho for a hot summer day.
Ingredients:
- 2 cloves garlic minced
- ½ yellow onion minced
- 2 cups chicken broth divided
- 2 large avocados are pitted and peeled and cut into cubes
- 1 tbsp lime juice
- ¼ cup cilantro leaves
- Salt and pepper to taste
- ½ cup heavy cream
Instruction:
- Bring a soup pot to medium-high heat, adding the garlic, onions, and 1/4 cup of chicken broth. Cook until onions are translucent and garlic is starting to brown. Add remaining chicken broth, avocados, lime juice, and cilantro.
- Bring to a boil and simmer for 5 to 10 minutes to blend the flavors.
- Add salt and pepper to taste. Put the soup in the blender. Blend until smooth. Add the cream and mix just long enough to integrate it.
