Sushi is served at a number of eateries in Bermuda, but none are finer than Pearl, the second-floor lounge above Port O Call. First, find out what's available locally, such as freshly caught yellowfin tuna, wahoo, or rockfish. Next, order the salmon belly nigiri, a rich, fatty cut torch-blistered and finished with a sprinkle of soy sauce. (Pearl sometimes has it, and sometimes it doesn't.) When it's time to order the maki rolls, tell your server what you want and leave the rest to the chefs. Sure, there's a lot on the menu, but the white-jacketed stars working diligently behind the sushi bar are part of Pearl's brilliance.

A chilled bottle of Austrian Grüner Veltliner (try the Schloss Gobelsburg) or a chilled Kirin is a great choice (poured in a frosty glass, obviously). Pearl also has one of the best sake selections in town, with hints of pear and cantaloupe in the unfiltered Pure Snow.
