    Kai

    Kai is the Sheraton Wild Horse Pass Resort's crowning glory. The restaurant closes every summer for its cooks to travel across America in search of the boldest and brightest flavors for their cuisine, which has a Native American theme. This cuisine takes the traditional flavors of Native American tribes from all around the world and gives them a highly modern and innovative spin. Chef de Cuisine Ryan Swanson creates memorable culinary marvels by combining the essence of the Pima and Maricopa tribes with locally cultivated foods from the Gila River Indian Community.


    The Native Seed/SEARCH Foundation, a program dedicated to preserving old lines of Native American seeds that might otherwise be extinct, has items on the menu at Kai, which means seed in Pima. Kai has created a menu that includes grilled tribal buffalo tenderloin with smoked corn puree, cholla buds, chorizo and scarlet runner bean chile, and saguaro blossom syrup, among other dishes that pay homage to Native American cuisine.


    Other favorites include escargot, wild mushrooms, and caramel goat cheese served with native "bread" and truffle crema, lemon and black garlic butter, and pig belly, which rotates to take advantage of seasonal food. The Great Plains Bison dish includes pemmican in McClendon's Farm date leather, tartare and cured yolk, marrow custard, and sumac piloncillo; the Venison Season dish includes blue foot and truffle mushroom bread pudding, cranberry sumac game jus, mangalitsa lardon, and garlic root hay.

Offering a modern and contemporary take on Japanese cuisine, with an emphasis on Omakase dining. Omakase is a Japanese concept in which the chef chooses the meals rather than ordering them a la carte, comparable to a tasting menu. This style necessitates a competent chef with a refined palate, which ShinBay's executive chef achieves with his selection of complementary items.


    Chef Shinji Kurita specializes in a modern take on traditional Japanese cuisine. ShinBay in Scottsdale was a semifinalist for the James Beard Foundation's "Best New Restaurant" award in 2012.     Virtu

    Virtu is a hidden gem in Scottsdale's Old Town, serving a worldwide take on Mediterranean flavors. The Virtù family's newest eatery is Pizzeria Virtù. This property held Grazie Pizzeria & Winebar, which was Chef Gio's first employment offer when he relocated to Arizona in 2002. When the location became available after 18 years, it simply made sense for him to return to this pizza and make it his own.


    Chef Gio felt that the key to Pizzeria Virtù's success would be to embrace the Napoletana heritage of pizza baking. Chef Gio received his training from the VPN Americas and was recognized as a pizzaiolo by the AVPN (Associazione Verace Pizza Napoletana), the regulatory body that protects Napoletana style pizza traditions. The menu of Pizzeria Virtù changes frequently while following to the strict standards of the AVPN, keeping Pizzeria Virtù in the same tradition that has made Virtù Honest Craft a staple in the valley. The food is a contemporary American selection as elegantly presented as the restaurant's décor, with a unique turn-of-the-century facade in a renovated blueprint shop left on the classy side of run-down.     House of Tricks Restaurant first opened its doors in 1987, in a delightfully refurbished 1920's home that serves as a green retreat just steps away from the hustle and bustle of downtown Tempe and Mill Avenue. A dozen tables were arranged around a historic stone fireplace made of local river rock in the warm interior. A canopy of large trees surrounded the outdoor patios, giving the area the feel of a former residential neighborhood. The house next door, a 1903 adobe brick structure with historical significance, was purchased in 1994 and restored to its turn-of-the-century elegance. Tricks' indoor seating capacity was tripled and intimate areas for private events were established with the construction of two exquisite dining rooms in this "a la carte" facility.


    A wooden deck and outdoor patio bar have been erected into the planted area between the two residences, giving a suitable setting for a casual dinner or an after-work cocktail. Two more outside patios, each with its own distinct and cozy vibe, provide additional room for private events and alfresco dining.
