  1. The Jane's spectacular two-Michelin-star dining, set in a stunningly repurposed historic military-hospital chapel, is such an astoundingly fantastic experience that you'll need to book three months in advance...on the dot of 8 a.m.

    If you're not up for a full night of fine dining, lunch reservations for the more casual upstairs bar room, which looks down on the main restaurant via a massive 900kg starburst chandelier, are a little easier to come by, but you'll still need to plan ahead. Alternatively, you can come in after 10 p.m. on any night for cocktails (€16) or a glass of wine (from €8). The setting of The Jane is off the usual path in a quiet but opulent inner suburb.

Hortense & Humus is a true treat, with a Sistine Chapel-style ceiling and gold-trimmed furnishings, serving haute vegetarian cuisine such salt-crust baked swede with roasted Jerusalem artichoke and shiitake mushrooms, and chestnut cake with poached pears. The majority of the herbs and vegetables are grown in the garden, with the remainder purchased locally.

    Matthieu Chaumont, a mixologist, utilizes kitchen herbs to make mocktails during the day and cocktails at night. At Hortense & Humus, Chef Nicolas Decloedt received his training in some of Europe's finest fine dining establishments (Mugaritz, In de Wulf, Bon Bon). He's developed a cooking approach that's influenced by botanical study and foraged delicacies. Each plate's masterful arrangements reflect his keen eye for detail as an art photographer.

    Caroline Baerten studied at the prestigious Ter Duinen culinary institute in Koksijde and went on to become a nutritionist and a WSET certified sommelier. She uses her artistic skills in interior design and ceramic tableware at humus x hortense, where she worked as an art historian. She is the founder of the 'Soilmates' movement and the 'Heritage Bean Project,' where she works at the crossroads of botanical cuisine, soil health, and ecology.

    Nona is a taste of the good life in Brussels, with its striped monochrome awning, marbled counter, and Neapolitan slow-rising-dough pizzas. Except for the Italian tomatoes and olive oil, all of the components, including the mozzarella di bufala, are Belgian and generally organic. Try pumpkin and bacon pizzas, gorgonzola, pear and pine nuts pizzas, or the vegetarian 'From Dries with Love' pizza.


    It's straightforward. They prepare authentic Italian cuisine with fresh Belgian products. Because it's just more convenient that way.


    At Nona, they are a little fascinated with ingredients. They work with organic, family-run farms to provide all of the greatest produce the season has to offer in their kitchens. We're a little strict about it, to be sure.


    They have all lost their way a little when it comes to food, thanks to strip-lit stores and synthetic agribusiness. Have you ever compared a fresh, sun-ripened tomato to one grown artificially in a greenhouse? It's hard to believe the difference. Bel Mundo, Brussels' most ecological restaurant, creates delectable, cheap dishes from seasonal vegetables grown in its organic home garden and unsold store items in an effort to eliminate food waste. The furniture is built from recycled pallets and handcrafted in the carpentry workshop by friendly employees who were previously unemployed for an extended period of time. Soups, seasonal salads, and pasta meals are on the menu.

  5. The Comptoir Rodin begins on the street, with the discovery of the building that houses this restaurant. It's the Pavillon Rodin, which was built between 1882 and 1888 and is the last surviving part of the former Brussels Military Hospital. With beautiful red bricks and many windows, its facade is intimidating and imposing. Once the entrance door is closed, one comes face to face with Rodin's Penseur, who is trôning, concentrating, in the center of the entrance.


    Visitors to this hidden canteen, which was originally a military hospital, are greeted by a miniature bronze reproduction of Rodin's The Thinker. Comptoir Rodin and its verandah, remodeled with sleek concrete flooring, exposed brick walls, and mismatched furniture, serve lunches worth pondering - try the aubergine toast or the meatball bowls.
